Our SPIRIT PARTNERS

DOGHOUSE DISTILLERY
Doghouse Distillery was established in Battersea in late 2016 , and is the only full turn-key distillery in London. We chose Battersea as our home due to its industrial history and grungy vibe.Doghouse has a full micro-brewery, 3 rectification columns (a total height of 21m) and a 1500 litre copper pot still. We are one of the few distilleries that make our base spirit from scratch aka we do things the hard way! We currently make four core spirits - Renegade Gin, Baller Vodka, Baller ‘Chilli Bacon’ Vodka and Doppelgänger Aperitivo. Our 5th core spirit (whisky) is currently in production! And why Doghouse? “Doghouse” to us reflects an underlying vibe of good times, passion and innovation, with a hint of rebellion. If you enjoy a drink or two then it’s likely you have spent some of your life ‘in the Doghouse’, and if you come on a night out with us, you’re certainly going to end up there! In the Doghouse we are passionate about doing things ‘properly’. We like to have control over the whole process, to be accountable when it comes to uniqueness and quality, and to master what we have learnt is a rare trade! We source all of our grain locally, the majority of which comes from farms in Norfolk. We buy in whole grain and then mill it onsite, mash it in our brewery to release sugars before pitching yeast which kicks off fermentation turning this wort into beer. Our process varies slightly depending on what spirit we are making and this is where the art comes in and trying to take a different approach (not taken by others before) to create something novel. And the spirits really do speak for themselves.. we have won numerous gold and silver medals from various awards.

RAGAZZI e SUCCO
From Bartender to Sommelier, Restaurant owner and cook, my experience in the hospitality industry has spanned over 24 years. Balancing flavours and tastes, while managing people and expectations was an integral part of my hospitality background and has led me to this next chapter, creating Ragazzi e Succo.
Aperitivo’s and Amaro’s are something special to me. Bitter, sweet, herbaceous, complex and textural, amaro’s and aperitivo’s are best served before dinner to create an appetite, or also perfect as an after-dinner digestive. Whether its spritzed, neat, stirred, shaken, soured or simply with ice & a slice….You do you!
I have created Ragazzi e Succo Aperitivo, with maximum flavour in mind. It features an assortment of organic citrus fruits, local herbs & roots while also including classic Italian amaro botanicals. Distilled with grape spirit then steeped for an extended time, it is mixed and sweetened to create a unique flavour profile but with a familiar taste to be enjoyed as you would a classic aperitivo or amaro. My go to is with lemon juice and tonic water with a slice of pink grapefruit, but with its versatile flavour profile can be used in a cocktail that suits you.

BUNKER DISTILLERY
Bunker Distillery is an Australian craft distillery born from a spirit of adventure and the belief that great experiences deserve great rewards. After stepping away from a long and demanding career in forensic investigations, Phil Bunker set out to explore the remote Australian countryside with his family. One such journey led them to Lightning Ridge — a place of deep personal connection, where his wife had attended school in the 1980s and where stories of adventure and resilience run deep.
After a day spent digging for opal without success, Phil returned to camp as the sun set and rewarded himself by the fire with a glass of whisky. Reflecting on the day, he remarked, “I didn’t find opal, but I found liquid gold.” That moment became the spark — an idea born from exploration, reflection, and reward.
Inspired by the freedom of the outback and the simple ritual of enjoying a great spirit after a hard-earned day, Phil dreamed of creating a distillery that celebrated adventure and craftsmanship in equal measure. Leaving behind a career shaped by darkness and destruction, he chose to pursue something life-affirming: crafting Australian spirits designed to be the reward at the end of the journey.
Bunker Distillery is an Independent, family owned distillery located at Spring Grove, in the Northern Rivers NSW. Bunker spirits are made using traditional distilling methods and real fruit and natural ingredients, delivering vibrant, authentic flavour without compromise— a commitment that has earned industry recognition.
Today, Phil produces award-winning Australian spirits recognised with gold medals and trophy titles nationally and internationally — made to be discovered, shared, and enjoyed as a reward for living adventurously.
GOODRADIGBEE DISTILLERS
This is not a story about one spirit being better than the other. It’s a story about the determination of an Australian distillery to create a spirit that’s the only one of its type on the shelf.
This burning desire began, funnily enough, while burning Australian hardwood on a campfire beside the Goodradigbee river, in the Snowy Mountains of New South Wales.
A large Ironbark log from the mighty Ironbark tree was placed in the flames. Then the guessing game began. Was that the aroma chocolate wafting from the flames. Another campfire, another question. On a sheep station in Leonora WA, a Jarrah log was thrown down. Was that the aroma of cinnamon or aniseed? This was revelatory – incredible aromas emerging from native trees. We didn’t set out to be different for the sake of it. We simply wanted to make quality spirits that had unique provenance; to produce a singular Australian taste quicker and deliver it with flair.
Our (patent pending) accelerated maturation cubes, built from these unique Australian hardwoods, have a much higher wood-to-liquid volume than a barrel, so more wood equals more flavour and the colour of a 10-year-old single malt whisky in months.
The Australian hardwoods we chose, most of which come from our alpine areas, are hard and dense because of the weather extremes. Unlike oak, which is effectively a ‘wet’ wood to begin with, our hardwoods react violently with the liquid, cracking and opening up, absorbing the liquid. The results are Australian hardwood malt spirits and wood-infused gins that are sweet, complex, delicious and revolutionary.
EUREKA DISTILLERY
As Archimedes once said, Eureka I’ve found it!It’s the story that led our small artisan distillery to be known as Eureka Distilling. And it has a lot to do with Philip Crossley, our ‘Archimedes’ founder.
One of the oldest and well-known tale revolves around Archimedes' legendary “Eureka!” moment while taking a bath in a tub, when he made a remarkable discovery, what is now known as the Archimedes Principle.
Allegedly, Archimedes was so thrilled and excited with this discovery that he immediately hopped out of the bath and ran onto the streets to tell the king, shouting loudly 'Eureka! Eureka!' (I have found it! I have found it!), in delight. Archimedes went on to make a number of important contributions in science and mathematics.
Science is all about facts and discoveries, with some of the remarkable breakthroughs coming from seemingly everyday occurrences and experiences. Those Eureka moments.
Just ask Philip, our head distiller who is an alchemist of sorts. He is a modern day Archimedes, together with his team discovering new and exciting ways to create those Eureka spirits.
There literally is a story and Eureka moment in every bottle.
